    Climate influence on aging

    The tropical climate considerably accelerates the exchanges between rum and barrel wood. One year of aging in the Philippines is equivalent to about 3 years in Europe. This intense maturation quickly develops complex aromatic profiles, while generating a significant "angel's share".
